Pasteurization partially sterilizes a product by killing bacteria. Although there are various methods they all remove the natural living bacteria. That is why we choose never to pasteurize our vinegar keeping the healthy bacteria alive just as nature intended.

A “raw” product is one that has not been chemically altered or heat treated it stays in its purest most natural form.

Organic fermentation is a natural process where carbohydrates found in fruits are broken down by beneficial microorganisms like yeast and bacteria already present in the air and on the fruits themselves, without the use of synthetic yeast, chemicals, artificial additives, or genetically modified organisms (GMOs).

In vinegar production filtration removes natural solids like fibers but may also strip away beneficial cultures that is why we prefer to keep ours raw and unfiltered.
